Mushroom "Risotto" |
2 1/2 C riced cauliflower
2 Tbsp chicken stock
1/2 C white wine
1 Tbsp butter
3/4 C coarsely chopped mushrooms
3 Tbsp minced onion
1/4 C plus 2 Tbsp Parmesan cheese, grated
1/2 teas lemon peel
few sprinkles nutmeg
Steam cauliflower in microwave 2 1/2 - 3 1/2 minutes. Saute mushrooms and onion in butter until onion is translucent. Add chicken stock, wine and steamed cauliflower. Heat through until liquid is reduced, Remove from heat add lemon peel, Parmesan cheese and nutmeg. Stir well. Enjoy!
