Mushroom "Risotto"

Mushroom "Risotto"
Here is today's creation:

2 1/2 C riced cauliflower
2 Tbsp chicken stock
1/2 C white wine
1 Tbsp butter
3/4 C coarsely chopped mushrooms
3 Tbsp minced onion
1/4 C plus 2 Tbsp Parmesan cheese, grated
1/2 teas lemon peel
few sprinkles nutmeg

Steam cauliflower in microwave 2 1/2 - 3 1/2 minutes.  Saute mushrooms and onion in butter until onion is translucent.  Add chicken stock, wine and steamed cauliflower.  Heat through until liquid is reduced,  Remove from heat add lemon peel, Parmesan cheese and nutmeg.  Stir well.  Enjoy!

Here begins the journaling of my low carb food adventures.  Here will be whats for breakfast and lunch each day, I only eat 2 meals a day.  Some days I'll post pictures and even recipes of what's cooking.  Hopefully this blog will help someone out who's trying a low carb lifestyle.


Today one of my favorites nachos!  I just love jalapeno cheese chips to scoop up nacho meat.  No pics cuz lets face it nachos don't look that good... they just taste that good.
